Hello everyone who's stopped by! I'm excited to share my experience with a pancake maker that's been a total game-changer for me during Maslenitsa week.
I've never had a pancake griddle before, but it's a total must-have for any pancake lover. I used to cook pancakes on my small frying pan, but it was a nightmare once the non-stick coating wore off. So, I finally decided to get a dedicated griddle. I checked out options at Magnit and Pyaterochka, but there wasn't much to choose from, so I headed to Lenta. Their selection was great, and the prices varied. I was lucky to find a griddle that caught my eye on sale for 399.99 rubles. That's a steal, considering the full price without the discount is 799.99 rubles.
I compared it to more expensive options, but I ended up choosing this one anyway. I liked holding it in my hand - it's lightweight, so cooking pancakes will be a breeze. Honestly, I'm not a fan of heavy frying pans, and a pancake griddle should be, in my opinion, almost weightless. Plus, the design is really stylish - the black pan with white spots is a real head-turner, and the aluminum edging gives it a premium feel. I was also worried about compatibility with induction stoves. This Homeclub griddle works with all types of stoves, and it's dishwasher-safe, but I find it easier to wash it by hand after cooking pancakes - it's not a big deal. I just wipe it clean with a sponge and soap, and that's it.

Before I started cooking, I gave the pan a good wash and dried it thoroughly. Since the pancakes already have oil in them, I could have cooked them on a dry pan without any issues. But I still chose to apply a small amount of oil to the pan using a silicone brush - it's just my personal preference. A little oil can go a long way in preventing the pancakes from sticking to the pan.
I have to admit, I'm not a fan of hovering over pancakes while they're cooking - it's not the most efficient process. But it turns out that the right pan makes all the difference. I was able to cook a massive stack of pancakes much faster than I would have on my old pan. The even heat distribution and the right size of the pan made all the difference.
I have to say, the pancakes made with this pan were a total surprise. The process was so easy and pleasant, one pancake after another. And the result was even more impressive - I've always managed to get pretty decent pancakes, but these were something else. The batter spread evenly across the pan, just like butter. It was perfect, quick, and spotless, no lumps or imperfections whatsoever.
Now, as promised, I'll share the recipe for my Lemon-Mac Pankcakes!
They turned out incredibly beautiful, aromatic, and delicious, and they'll be a hit on your Maslenitsa table.
Ingredients:
3 eggs 600 ml milk 300 g flour 100 g sugar 1 lemon Mac to taste (I used about 20 g of dried mac) 1/2 tsp baking soda 40 g butter for the batter + for greasing the pan 1/2 tsp turmeric Salt to taste
I'll be honest, I didn't use a mixer or blender - I'm used to mixing pancake batter with a whisk. If you find it easier with a mixer, go for it. I like to keep things simple and traditional.
Macaroni to soak in a deep bowl and let it soften for a bit. Grate the lemon zest and squeeze the juice (I used store-bought lemon juice). Make sure to get a good amount of lemon zest for that perfect flavor.
I whisked the eggs, then added 400 ml of milk and whisked again. In a separate bowl, I combined the flour with curry powder, baking soda, and salt, then added it to the egg mixture. If the batter seemed too pale, I'd add a bit more curry powder to get that lovely yellow color. After whisking everything together, I added the lemon juice (about 30-40 ml), lemon zest, and 40 g of melted butter, whisking until smooth. The lemon juice and zest add a lovely brightness to the batter.
I strained the macarons and mixed them with sugar, then added them to the batter and let it rest for 20 minutes. Finally, I added the remaining milk and gave it a good stir. The resting time helps the batter to relax and become easier to work with.
That's it – now I could start frying the blini. Keep in mind that the macarons will only be visible on one side of the blini, the top one. I liked to place them with the macarons on top for a prettier finish, and I'd also fold the blini in the same way to keep the macarons on the outside. It's all about presentation.
Remember to mix the batter occasionally while cooking to prevent the macarons from settling at the bottom. The blini cooked up quickly, with a medium thickness that my husband and I both love. If you prefer them even thinner, just add a bit more milk or water and use a smaller amount of batter for each blini. It's all about finding the right balance.
These pancakes were a dream to make – I just spread a bit of butter on them, and if you're not a fan of butter, you can skip it, but it makes them so tender and delicious. I left the edges a bit rough, so they'd stay crispy. Check out how perfectly round they turned out on this pan! The even heat distribution and the right size of the pan made all the difference.
Not only did they look amazing, but they tasted incredible too. They had just the right amount of lemon zest and a lovely crunch from the sesame seeds. We were both blown away by how delicious they were – my husband even asked me to make them again! They're great with sour cream or condensed milk, and if you add a bit more lemon, you can enjoy them without anything at all. The combination of flavors is just perfect.
